Mini-Stuffed Meatloaf with a Ketchup Glaze:
Ingredients:
lb ground sirloin
1/4 cup seasoned panko bread crumbs
1 large egg
1/4 cup pasta sauce
1/4 tsp salt
1/4 tsp ground black pepper
4 slices prosciutto
2-3 ounces mozzarella cheese (block or string)
1 1/2 TBSP ketchup

The real key is to stuff your meatloaf with something that gives it flavor and moisture. If you take nothing else away from this recipe just remember that adding a slice or two of cheese (preferably a mozzarella stick) into your meatloaf will ensure a delicious meatloaf from outside to in.
